This is a good picture of the Deidara. It shows the special mouth in the palm of his hand that he uses to product chakra infused clay.
You can also see a little clay bird that Deidara has created sitting on his other hand!

Gaara is able to control sand because of Shukaku who is sealed within him.
This allows Gaara to direct sand and compress it, allowing him to crush his enemies.
This sand control can also be used to block attacks against him.
